Hyderabadi Bangan
Ingredients:
2 tbsp Coriander Seeds
1 tbsp White Cumin Seeds
2 tbsp Poppy Seeds
2 tbsp Peanuts
2 tbsp White Sesame Seeds
Roast all of these. Turn into powder.
1 cup Ghee
1 Red Onion (Roast slightly and grind)
4-5 Bunches Curry Leaves
6 Whole Red Chillies
1 tsp Mustard Seeds
1 tsp White Cumin Seeds
In the onion paste, add:
1 tbsp Red Chillies Powder
1 1/2 tsp Turmeric Powder
1 tsp Coriander Powder
1/2 kg Bangaan
1 Glass Water
4 tbsp Tamarind Pulp
Instructions:
Pour clarified butter in a pot and then roast curry leaves, whole red chillies, mustard seeds and white cumin seeds. Add the onion paste mixture. Roast it a bit. Add the powder mixture. Then roast it further. Add Bangan. Then roast them with the mixture. Then add water. Tamarind pulp and black seeds. Cook till the bagaans are soft.
Tips:
You can take more tamarind if you like. We add black seeds and Tamarind later to avoid turning the gravy black.
