Khuginah (Egg Omelette with Potatoes)


Ingredients:

1 Medium Potato (cubed)

2 Beaten Eggs

1 Small Onion (sliced)

1 Small Tomato (sliced)

1/2 Green Chillie (chopped)

4-5 Coriander Sprigs (chopped)

1/4 tsp Salt or as per taste (twice)

1/4 tsp Red Chillie Powder or as per taste

2/4 tsp White Cumin Powder

2 tbsp Ghee


Instructions:

Make an egg mixture by adding salt, red chillie powder, white cumin powder, coriander leaves and green chillie to the beaten eggs. Keep this mixture aside while you pour ghee into a pot. Add onion and turn it to light brown in color. Add tomato and potato. Turn them tender. Only when the potato and tomato become tender, you add the egg mixture. When the egg is done, it is ready to serve.


Tips:

You can add ginger-garlic paste or all purpose spices powder to your taste. You can increase or decrease the quantity of any of these ingredients as per your taste, as well as change vegetables to your liking.
