Mix Root Vegetables
Ingredients:
2 Carrots
1 Radish
1 turnip
1 Cauliflower
2 Potatoes
1/2 bunch Dill Leaves
1 tbsp Dried Fenugreek Leaves
1 Red Onion
1 Tomato
2 Green Chillies
4 Whole Red Chillies
1 tbsp Ginger-Garlic Paste
1/4 tsp Turmeric Powder
1/2 cup Clarified Butter
1 tbsp White Cumin Seeds
1/2 tbsp Red Chilli Powder
1 tsp Salt or as per taste
Instructions:
Slice all the vegetables to an appropriate size. In a pot, pour clarified butter. Add whole red chillies and turn them lightly brown. Add onion and saute it. Add ginger-garlic paste and saute it. Then add fenugreek dried leaves, dill leaves and all the vegetables together, except tomato, and cook them well. Then add tomato, green chillies, salt, red chilli powder, turmeric powder, and white cumin seeds. Leave it on a low flame till all vegetables are tender. Make sure not to turn then too mushy and soft.
