Seasoned Chicken & Veggie Pasta
Ingredients:
1 1/2 cup Pasta (boiled)
1 Spring Onion (chopped)
1/2 Capsicum (chopped)
1 Medium Carrot (chopped)
1 1/2 cup Sweet Corn
1/2 Breast (Boneless Chicken)
1/2 tbsp Chilli Pesto
1/2 tbsp No. 1 Classic Basil Pesto
1 tbsp Clarified Butter
Chicken Seasoning:
1/2 tsp Onion Powder
1/2 tsp Garlic Powder
1/2 tsp Black Pepper Powder
1/4 tsp Salt or as per taste
Instructions:
Season the chicken with the ingredients mentioned above. Keep it marinated with the seasoning for at least 30 minutes. In a pot, boil the pasta by adding 1/2 tsp of salt and 2 tsp of cooking oil. When the pasta gets tender, then throw away the water and keep the pasta aside. In a frying pan, stir fry all the veggies in clarified butter. When they get a bit crispy and tender, then add them to the pasta. Then in the same frying pan, fry the seasoned chicken breast. When done, allow it to cool down. Then, make tiny little pieces of chicken and mix them well with the pasta and veggies. Then add the two pestos for further tasty flavoring.
