Soya Methi Chicken Karhai Ingredients: 600g Chicken 1/2 cup Clarified Butter 4 Medium Onions (sliced) 1 1/2 tbsp Ginger-Garlic Paste 1 Black Cardamom 1 Bay Leaf 1 Cinnamon Stick 10-12 Cloves 10-12 Black Peppercorns 1 tbsp White Cumin Seeds 1 tbsp Red Chillie Powder 1/4 tsp Turmeric Powder 1/2 tsp Salt or as per taste 2 Green Chillies 1 Tomato (sliced) 4 tbsp Yogurt 1/2 Bunch Dill 2 tbsp Dried Fenugreek Leaves Instructions: In a pot, add chicken. When it turn slightly white, then add clarified butter, onions, ginger-garlic paste, red chillie powder, turmeric powder, salt, tomato, yogurt, black cardamom, bay leaf, cinnamon stick, cloves, black peppercorns, white cumin seeds, and green chillies. Leave it at a low flame till chicken gets tender. Then add dill and dried fenugreek leaves. If you want a bit more gravy, then add 1/2 cup water. When done, serve it with roti.

Bhunni Hui Moong Ki Daal

Bhunni hui moong ki daal 1 Cup Moong Daal 1/2 cup Ghee 3-4 tbsp Water or as required 1-1 1/2 Glass of water for daal cooking 1 tbsp Ginger-Garlic Paste 1 tbsp Red Chilli Powder 1 tbsp Coriander Powder 1/2 tsp Turmeric Powder 1/2 tsp Salt or as per taste 8-10 Black Peppercorns 2 Green Chillies (sliced) 1/2 tsp White Cumin Seeds At least soak the daal for an hour. In a cooking pot, pour ghee and heat it for a bit, but not too much. Then, add black peppercorns. Crackle them a bit. In a bowl, add ginger-garlic paste, red chilli powder, coriander powder, turmeric powder, salt and water. Mix these well. Pour the mixture in the cooking pot and cook till the ghee separates. Then add daal. Mix it well. Add water. Cover it with a lid. Then cook it till the water dries. Then, when the daal is well done, it is ready for serving.

Roghan Josh Ingredients: 500g Mutton (With bone for more taste) 1/2 cup Clarified Butter 1 Black Cardamom 1 Cinnamon Stick 1 Mace 4 Cloves 4 Peppercorns 1 Onion (chopped) 1 tbsp Ginger-Garlic Paste 1/2 tsp Salt or as per taste 1 tsp Red Chilli Powder 1 tsp Cumin Powder 1 tbsp Coriander Powder 1 tsp Garam Masala (All Spices Powder) 1 1/2 tsp Fennel Seeds Powder 1 Tomato (sliced) 4 tbsp Yogurt Instructions: Pour clarified butter in a pot. Crackle peppercorns, black cardamom, cinnamon stick, cloves, and mace. When it gives out fragrance, then saute chopped onion. Turn it lightly brown and then add mutton pieces. Turn meat lightly brown and then ginger-garlic paste. Then add a bit of water to avoid burning. Add salt, red chilli powder, cumin powder, coriander powder, garam masala or all spices powder, fennel seeds powder, tomato and yogurt. Then cook it a bit. Then add as much as you require and leave it at a low flame till the mutton pieces are tender.
